Creamy Fruit Ambrosia

The nutty flavour of the pecans stands out among the sweetness and tones it down a bit. There are no fixed ingredients for fruit ambrosia. Just toss in any fruits that you have available, coat it with whipped cream or yogurt and you will end up with an easy and great tasting dessert. Let the fruit salad sit for an hour so that the fruits can infuse their essence into the creamy base. A handful of marshmallows on top adds a playful touch, but you can easily do without them. So toss in creamy fruit ambrosia for a light fruity lunch or a dessert and relish it’s amazing combination of flavours.

Creamy Fruit Ambrosia
  • 4 cups fresh pineapple, cubed
  • 2 tbsp shredded coconut
  • 2 cups fresh peaches, coarsely chopped
  • 1 tbsp pecans, finely chopped
  • 8 oz low fat yogurt
  • ½ tsp vanilla extract
  1. Mix the fruits well in a bowl and leave it in the refrigerator to chill.
  2. Whisk the yogurt and vanilla extract until it gets smooth.
  3. Distribute the fruit mixture into serving dishes and add generous dollop of yogurt on top.
  4. Sprinkle 1 tsp shredded coconut and half a teaspoon of chopped pecans on top of the fruits.
  5. Serve chilled.
