Lentil Fritters

8 Fritters
 
Ingredients
  • 1 ¼ cups lentils, rinsed
  • 1 egg, beaten
  • ½ cup rolled oats, grinded
  • Olive oil for frying
  • 2 tsp ground cumin
  • 3 garlic cloves, minced
  • Few pinches of red pepper flakes
Instructions
  1. • Boil the lentils in salted water, and then let them simmer under low heat for about 15 minutes.
  2. • Drain them and mash them up with garlic, cumin, red pepper flakes and 3 tbsp of the ground oats.
  3. • Mix the egg with mashed lentils and season with salt and pepper.
  4. • Shape the mixture into round fritters and cover them with the residual ground oats.
  5. • Let them chill in the refrigerator for about half an hour.
  6. • Heat oil over medium heat and fry the fritters in batches until they brown on both sides.
  7. • Serve with a lemon wedge at their side.
