Mediterranean Quinoa Salad with Pine Nuts

Mediterranean Quinoa Salad

  • 250 grams quinoa
  • 1 red onion, finely sliced
  • 5 sun dried tomatoes, roughly chopped
  • Few cherry tomatoes, halved
  • 2 tablespoons pine nuts
  • 5-6 black olives, pitted
  • 10-12 basil leaves, finely sliced
  • Olive Oil
  • Salt and pepper
  • ***For the dressing***
  • Juice of one lemon
  • Juice of one orange
  • 1 teaspoon brown sugar
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  1. Wash the quinoa with cold water and boil it in salted water until all the water is absorbed. Leave it aside to cool.
  2. Sauté the onions in olive oil briefly.
  3. Throw the cherry tomatoes into the pan, sprinkle the seasoning and cook for a minute or so.
  4. In a bowl, combine the sautéed mixture, sun dried tomatoes, basil and pine nuts.
  5. Add the cooked quinoa to this mixture and toss well.
  6. In a smaller bowl, mix the ingredients for the dressing thoroughly.
  7. Pour it over the other mixture and mix properly.
  8. Serve and relish the freshness.
