Ingredients
  • 12 oz fresh asparagus
  • 4 oz cooked ham
  • 1 oz margarine
  • 280 ml cream
  • 8 oz penne
  • 1 tbsp olive oil
  • Grated low fat cheese
  • Salt to taste
  • 1 tsp Italian seasoning
Instructions
  1. Scrape the sides of asparagus spears and cut off the ends about 1’’ inch from the bottom.
  2. Cut the ham into strips, about ½ ‘’ thick.
  3. Bring water to boil in a pan over medium heat and add a pinch of salt.
  4. Place the asparagus spears in the water, cover and bring back to boil.
  5. Cook the asparagus for about 2 minutes, then drain and allow to cool.
  6. Melt the butter in a pan over medium heat and add the asparagus and ham.
  7. Cook briefly to reduce the liquid and add the cream along with a dash of Italian seasoning.
  8. Bring to boil and cook over low heat for about 5 minutes to thicken the cream.
  9. Meanwhile, cook the penne in boiling salted water with oil for about 10 minutes.
  10. Drain the penne and mix into the sauce.
  11. Serve with grated parmesan cheese.
